The fascination with eggs continues unabated in our office.  After the bacon-impregnated egg-speriment, the next logical destination was pickled eggs.  It took me a long time to warm up to the concept of pickled eggs.  Nobody looks at a jar of hard boiled eggs in brine and says "Yum!  I want some of THAT in my mouth!".

But I did come around and I've purchased many a jar over the years.  Never made them myself though, until now.

Mmm, don't those look great?  They actually tasted really good and the rest of the office agreed.  Batch 2 is in the works as I write this.  Have I ever mentioned how much Jen hates eggs?  Yah, she can't wait for this obsession to pass.
